A fragment of conversation while making a bit of after dinner coffee the other night…

“That’s a grinder, right?”

um hmmm.

“And what’s that thing?”

This? It’s a portafilter.

“No, the thing on the front of the grinder, with the handle.”

Oh. Doser.

“And that’s a tamper?”

Yep.

“So what are you attaching the portafilter to?”

That would be the brew group.

“Okay”

(While pulling the next shot…)

“Let’s see… That’s grinder, doser, portafilter, tamper, and brew group?”

Is the question ‘Name five things you will no longer find at Starbucks?’

Gaggia Synchrony Compact - Cleaning the GrinderOne of the realities of most "super automatic" espresso machines like the Gaggia Synchrony Compact (and many standalone grinders, for that matter) is that dark roasted, oily beans don't seem to feed well -- they tend to clump together somewhat, and often have to be "encouraged" to go down the chute and into the grinder. I'd been sampling some of Intelligentsia's "Black Cat" espresso blend, as a baseline to compare my own roasts to. I tend to like a bit lighter roast, so Black Cat, despite being a very tasty blend, was quite a bit oilier than my usual beans. Things were going along fine, with me "encouraging" the beans, when suddenly no amount of coaxing would get more coffee...


Starbucks Barista Equipment Sale A little birdie told me today that Starbucks is having another big sale on their Barista coffee equipment next week -- starting Wednesday, March 23rd, in fact. If you're a regular reader of this site, you're probably aware that while I'm not a terribly big fan of Starbucks' coffee (over-roasted, over-priced, and served overly tarted-up, in general), I do happen to be quite fond of their Barista coffee makers. They actually work well, and wonder-of-wonders (for consumer grade coffee makers) they actually brew at around 190 degrees, which produces a proper cup of coffee. So I'm seriously thinking about a new coffee maker. My oldest has been wanting to swipe a morning cup from my beloved Barista Aroma Quattro,...


Dialing in your grindOnce you've got a grinder that produces a consistent grind and allows you to control the size of the grind, you'll need to "dial it in" for your coffee brewer. Most consumer oriented grinders will give you an approximate setting for different types of brew -- either a notation on the grinder adjustment itself, or instructions in the manual on which setting to use for which type of brewing. This is your starting point. Assuming you are brewing in a drip coffee maker, start with the recommended setting, and brew a pot of coffee. Pumpkin Spice Latte ProfitsAccording to Starbucks Gossip, our favorite purveyors of overroasted coffee are making money hand over fist with their new "Pumpkin Spice Latte" fall drink. In the four-week period ended Oct. 31, the company's comparable-store sales grew by 11% over the same period last year -- thanks, in part, to the pumpkin drink. Now if they'd just get over calling this stuff coffee, everything would be grand :-) If you must, however, the folks at Starbucks Gossip also included a link to a knockoff drink recipe you can make at home, or you could just get some pumpkin spice syrup at your favorite vendor -- either way, you'll save a few bucks per fix... ...
